Red Beets or "Apple of the Earth"
Did you ever notice how there's no need to wait for a summer rain to look for a rainbow. It's right here. In front of us. In the garden. And thanks to friends like beets, there is a vibrancy to the colors that is hard to...well...beet.
Just like with people, it's sometimes the ones with the most potential, the most vibrancy, that scare us the most. "I don't know what to do with beets!" people sometimes cry, throwing up their hands in despair, tucking their CSA beets into a plain brown paper sack and leaving them on a neighbor's doorstep.
Yet all it takes is a simple steam or roasting and a whole world of possibility is opened up for that little bit of colorful goodness.
Or shave off tiny pieces raw and add a big Wow! to a salad that had previously been swimming in a sea of green.
Beets are practically dripping with nutrition, overflowing with versatility, and it's been said they can tap dance (but only when no one is looking).
